I find that the tempo of eight dances, with a short 'loosener', in two hours is comfortable. Most of the classes have been dancing yonks and so are over 21(!) but there are a few beginners. We have a 15 min break but the class is very social so I don't mind them chatting. I ALWAYS play about 32 bars of music and they have learned not to ask whether it is a R, J or S because I don't relpy - they should have listened (!) and after that I do start whether they are talking or not.! If we do something more complex or someone has difficulty with a dance then 7 is the magic number per evening. I do dislike classes run like a military Boot Camp. I dance (& teach) for relaxation and fun and because it is a social activity. I have found that unless one is very careful BC classes tend to become too serious and po-faced.
