We once faced the same "problem" - we did a demo for a wedding in
Dortmund with only 3 couples dancing. We did:

Barop Wedding (J32)
Wind on Loch Fyne (Dunedin I 3S32)
Swiss Lassie (RSCDS 39  R 32) as a 3cpl dance.

Barop Wedding is a Jig I devised specifically for the occasion, i.e.
with the spectators in mind:

1-8      1 c turn right hand, cast off one place, set advancing and
passing left Sh ready for:
9-12     Double Triangles, finishing ready for:
13-24   3 c Allemande
25-32   1 and 2 c dance Rights and Lefts.

Fairly straightforward, but nice to watch. Not too exhausting either
despite all the activity, as it's only danced three times through.
