Great discussion; I'm glad I asked.

To Alan's point: of course, I've heard it before, and I have some
sympathy for it; however, how many times do you get to see that perfect
covering?

Re great sets, or longwise sets for as many as will: I think that is a
good idea for two couple dances, and would be happy to see it revived. It
would certainly let the great covering happen when it can, and it would
surely make any problems about encores go away. However, if we're going
to do our dances in sets of a certain number of couples, then I think a
three couple set is the right size for a two couple dance.
